Healthy Taco Tuesday

Let’s taco bout Taco Tuesday! Family memories often revolve around the dinner table…sharing laughs and making memories. There’s just something about building tacos, with lots of choices and creativity, that make it a fun way to enjoy a meal with family or friends.

Taco salad is a great option for a dinner that is delicious and health conscious. Below are ideas to have a fun family night while offering healthy alternatives to the traditional taco fare.

1.Pick a base: Start with brown rice or quinoa

Brown rice is a great whole grain. It is high in fiber and helps lower cholesterol.

Quinoa is gluten-free, high in protein, and contains many vitamins and minerals.

(Optional): Add a lean meat like ground turkey, chicken or lean ground beef.

2. Time to add TOPPINGS!

*Cheese: Cheese is a great source of calcium, fat, and protein

*Lettuce or spinach: Lettuce is low in calories and is a great source of fiber, iron, folate, and Vitamin C

*Spinach is an excellent source of Vitamin K and Vitamin A

*Black beans: Black beans are high in protein and fiber and can help reduce the risk of many medical conditions

*Bell peppers: Bell peppers are an excellent source of Vitamin A, Vitamin C, and potassium. They also contain fiber, folate, and iron

*Tomatoes: Tomatoes contain antioxidants and are high in Vitamin C, potassium, folate, and Vitamin K. They have been shown to reduce the risk of cancer and heart disease

*Avocado: Avocados are a great source of healthy fat. They are high in folate, magnesium, potassium, and many other vitamins

*Corn: Corn is a great source of fiber and contains many B vitamins

*Jalapenos: Jalapenos are a great antioxidant. They are rich in Vitamin A, Vitamin C, and potassium

*If you are looking for a little crunch, try sprinkling on some crushed baked tortilla chips. You might find that a few of these go a long ways vs using a whole taco shell. If you prefer a shell, corn is usually a better choice over flour.
